New Moon Goat Dairy in Chiloquin, Oregon
Newly licensed cheesemakers Lynne and daughter Jenny Cabral have just started New Moon Goat Dairy in Chiloquin, near Klamath Falls in Southern Oregon. Lynne has been living for over 30 years in this rural region that's a hot spot for cattle grazing - cattle are shipped up from California to graze the vast expanses of grassland. She's kept goats for years and always toyed with the idea of making cheese and recently, she was finally able to start a cheesemaking operation. She's making fresh chevre and a few flavored tortes right now and hopes to expand into a line of aged goat's milk cheeses in the future.
Look for New Moon's cheeses at the Klamath Falls Farmer's Market.

Yeah, they made it! Keep an eye out for some really wonderful cheese... Their fresh chevre heart with wild herbs from their butte is just one of the fabulous cheeses they have available, it actually smells of juniper and wild sage. I think it should be called Lonesome Cowboy.

Janet - this creamery is just starting up and they told me that distribution is fairly limited right now to the Klamath Falls area. But you might contact them for more information and/or to order some directly.
