Queseria Bendita
Today's Yakima Herald Republic has an article about Yakima cheese company Queseria Bendita. Even as you read this, owner Benedita Aguilar and her daughter Sandra are probably making queso fresco and requeson (resembles ricotta) in their small cheesemaking facility. The Aguilars have been so successful that they're building a new facility right behind the current building, allowing them to increase production capacity and distribute more widely. Queseria Bendita products are currently delivered to Seattle and Oregon hispanic markets several days a week or you can purchase cheese directly from the factory in Yakima.
